2 Potatoes
3 tbsp Olive Oil
8 oz Veal Round Scaloppini
1 Onion, chopped
1 tbsp Garlic, minced
3 oz Ham Steak (cooked)
1/4 tsp Crushed Red Pepper Flakes
1/4 tsp grated Nutmeg
1/4 tsp dried Parsley
1/4 tsp Fennel Seeds, crushed
1/2 cup Ricotta Cheese
1/3 cup Parmigiano Reggiano
3/4 tsp Kosher Salt
1/8 tsp fresh Cracked Pepper


1/2 cup Parmigiano Reggiano
1 cup Plain Bread Crumbs
2 Whole Eggs
1 tbsp Milk

1 cup Vegetable Oil for frying


• Peel, cut and boil Potatoes in medium sauce pot until cooked, about 15-20 minutes. Drain water and set aside.

• Over medium, heat Olive Oil in a medium sized skillet or fry pan.

• Once Oil is sizzling, brown the Veal Round Scaloppini, about 4 minutes on each side. Remove from pan and set aside.

• Reduce to medium-low heat. Add Onions and Garlic. Sauté for 5 minutes or until Onions become translucent. Set aside.

• In a Food Processor, pulse together cooked Veal and Ham until minced. Transfer meat to a medium-sized mixing bowl.

• Press cooked Potatoes through a Ricer into the same mixing bowl.

• Add cooked Onions and Garlic, Red Pepper Flakes, Nutmeg, Parsley, Fennel Seeds, Ricotta and Parmigiano Reggiano, Salt and Pepper. Mix together all filling ingredients and set aside.

• In separate bowl, prepare the breading mixture.

• Mix the Parmigiano Reggiano and Bread Crumbs together in a bowl. 

• In separate bowl, whisk Eggs and Milk together.

• Separate and roll the filling into oval balls, about the size of your palm.

• Dip the oval croquettes into the Egg mixture then into the Bread Crumb mixture, ensuring an even coat.

• In the same skillet or fry pan as before, heat vegetable oil.

• Fry the Croquettes until golden brown on all sides.

• Remove from pan. Let sit 3 - 5 minutes before serving.

• Serve hot, along side a salad.

Can I just say how much I love Veal? Really any meat for that matter, but Veal is one of my politically incorrect favorites. I grew up eating Veal Cutlets, but when the prices at the supermarket started to sky rocket, Mama Mocker switched to Chicken Cutlets. It was a very sad time in the Home-Mocker household. But I am an adult now, (no matter how much I fight it) and can afford to splurge on the good stuff. I combined all of my favorite flavors to create the perfect Veal & Ham Croquette.
