6 (1 lb) Cornish Hens
6 cloves Garlic, minced
3/4 tsp Black Pepper
1 1/2 tsp Salt
6 tsp dried Tarragon
Garlic Salt to season


3/4 cup Butter, lightly salted
3/4 cup White Wine
1 tbsp Dried Tarragon


• Preheat oven to 350˚F.

• Rinse and pat dry each Cornish Hen.

• Add 1 clove Garlic, 1/8 tsp Pepper, 1/4 tsp Salt and 1 tsp Tarragon to the inside of each Hen.

• Lightly season the outside of each Hen with Garlic Salt.

• Place each Hen, breast side up, in a large shallow roasting pan. Make sure the Hens are not crowded.

• Meanwhile in a small saucepan, over low heat, melt Butter, Wine and Tarragon together. Once melted, remove from heat.

• Roast, uncovered, basting with the Tarragon Marinade every 15 minutes for 1 Hour or until the internal temperature of the thickest part of the Hen reaches 180˚F. (If Hens weigh over 1lb 2oz, roasting time should increase to 1 hour and 15 minutes.)

• To brown the outside skin, increase temperature to 400˚F for the last 10 minutes.

• Remove from oven. Let sit for 5 minutes before serving.

Notes From Betty:

If roasting less then 6 Hens, you may want to reduce the quantity of marinade. For Example, if you are only cooking 2 Hens, the marinade would be 1/4 cup Butter, 1/4 Cup White Wine, 1 tsp Tarragon.
