4-6 Links of Mild Italian Sausage

2 tbsp Olive Oil
1 tbsp Butter (Salted)
1 large Green Pepper, thinly sliced
1 large Onion, thinly sliced
1 tsp Sugar


• In medium saucepan, boil Sausage Links for 30 minutes. Drain. Cut sausage lengthwise, being careful not to cut the link all the way through to separation. Set aside.

• In large sauté pan, add Olive Oil, Butter, Peppers and Onions. Uncovered, sauté for 10 minutes on medium low heat.

• Add Sugar. Mix well.

• Continue cooking for 15 minutes or until the Peppers and Onions are caramelized to your liking.

• Move mixture to one side of the pan.

• Add Sausage Links center-face down. Cook for 4 minutes on each side.

• Serve hot on a fresh Baguette or a Portuguese or Italian roll!

Please don’t get me started on Sausage and Peppers. It is my all time favorite food of choice. It is quick and easy and packs a punch at dinner. I prefer mild sausage but if you are daring, go for the hot or spicy.
