2 large Russet Potatoes, diced
1 cup medium Onion, diced
1/2 cup Green or Red Bell Pepper, diced
2 tbsp Olive Oil
1 tbsp Butter, salted
2 tsp ground Cumin
1/2 tsp Smoked Spanish Paprika
1/4 tsp Garlic Powder
1/8 to 1/4 tsp Chipotle Powder (dependent on preferred heat)
2 tbsp dried Parsley
1/2 tsp Kosher Salt 


• Cut Potatoes, Onion and Peppers into equal 1/4" cubes.

• In large sauté pan, melt butter and oil together over medium heat.

• Add potatoes, onions, and peppers. Cook for 5 minutes, stirring occasionally.

• Reduce to medium low heat. Add the remaining spices. Stir well.

• Cook for 20 minutes, stirring occasionally until potatoes are cooked through.

• Great served with Steak or Eggs.
