1 bundle of Thin Asparagus, cleaned & trimmed
1 tbsp Olive Oil
1/2 tsp Garlic Salt

2 cups Water
1 1/2 cup Calrose (Japanese) Rice, uncooked
1/4 cup Rice Vinegar
2 1/2 tbsp Sugar
1 tsp Kosher Salt

4 sheets Sushi Nori (Roasted Seaweed)

Black Sesame Seeds
1/4 cup leftover NY Style Chinese BBQ Sauce
1 cup leftover NY Style Chinese BBQ Pork, sliced into ¼” thickness


• Preheat oven to 375°F for 20 minutes.

• Place Asparagus on tin foil lined cookie sheet. Drizzle with Oil. Toss to make sure Asparagus is evenly coated. Sprinkle all sides with Garlic Salt.

• Bake, uncovered for 30-35 minutes or until tender. Remove from oven and set aside.

• Meanwhile, in saucepan over medium heat, combine Water and Rice. Bring to a boil and reduce heat to low. Cover and simmer for 20 minutes or until moisture is absorbed. Remove from heat and fluff with a fork.

• Combine Rice Vinegar, Sugar and Salt in microwave safe bowl. Heat for 30 seconds to dissolve sugar.

• Transfer rice to a large wooden or non-reactive bowl. Pour vinegar mixture over rice and carefully mix with a wooden spatula. Re-cover until you are ready to use.

 • Using either a half sheet or a whole sheet of Nori, place it over a Bamboo Sushi Mat with the shiny side facing down. Spread approximately 3/4  to 1 cup of rice evenly over the Nori leaving a 1” empty border on the side furthest away from you.

• Sprinkle rice with Black Sesame Seeds.

• Drizzle rice with Recycled Chinese BBQ Sauce.

• Place 1-2 stalks roasted asparagus across the center of the rice lengthwise.

• Place BBQ Pork slices in a single layer over asparagus.

• Place your thumbs on the back of the mat and begin rolling away from you, supporting the ingredients with your other fingers.

• Roll the Sushi to the end. Remove the Bamboo Sushi Mat and slice into six to eight pieces.

• Begin the process again until you complete 4 sushi rolls or until you run out of ingredients.

• Best served warm, so reheat in the microwave, if necessary
