5 slices Smoked Bacon
1 1/2 lbs. Chopped Lean Meat (Ground Beef or Bison)
1 medium Onion, chopped
1 medium Green Bell Pepper, chopped
2 cloves Garlic, minced 1 can (14.5 oz) Crushed Tomatoes
2 tbsp Tomato Paste 1 cup Beef Stock
2 tbsp Chili Powder
2 tsp Cumin
1 tsp Kosher Salt
1/2 tsp Coriander
1/2 tsp Celery Salt
1/4 tsp Chipotle Powder
1/4 tsp Tabasco 1 can (8.5 oz) Sweet Corn
1 can (15 oz) Cannellini, Kidney or Black Beans

: Sharp Cheddar Cheese, shredded 


• In large sauté pan, over medium heat, brown Bacon on both sides, about 5 minutes. Remove Bacon, crumble and set aside.

• Add Chopped Meat to bacon fat. Break meat into smaller pieces during browning.

• When more than half the mixture is browned, add Onions and Peppers.

• Once the meat is fully browned, add Garlic. Sauté for 1 minute.

• Add Crushed Tomatoes, Tomato Paste, Beef Stock, Chili Powder, Cumin, Salt, Coriander, Celery Salt, Chipotle Powder and Tabasco.

• Cover, reduce heat to medium low and simmer for 20 minutes. Mix occasionally.

• Add Corn, Beans and crumbled Bacon. Mix to incorporate.

• Cover and continue cooking for 20 more minutes.

• Separate into individuals bowls and top with shredded cheese. Enjoy!
