2 cups Chicken Stock, low sodium
1 1/2 tbsp Lime Juice
1 tbsp Butter or Olive Oil
1 tbsp Tomato Paste
1/4 tsp Smoky Paprika
1/8 tsp Chipotle Powder
1/2 tsp Garlic Powder

1 cup Long Grain Rice
2 Carrots, peeled and cut crosswise into 1/8" thick round flat discs

1 cup Black Beans, cooked and heated
1 tbsp Cilantro, chopped
Salt to taste


• In medium sized pot, add Chicken Stock, Lime Juice, Butter, Tomato Paste, Paprika, Chipotle Powder and Garlic Powder.

• Bring to a boil then add Rice and Carrots. Stir.

• Bring back to a boil.

• Lower heat, cover with lid and simmer for 15 minutes or until all liquid is absorbed.

• Add Black Beans, Cilantro and Salt. Mix well.

• Serve hot.
