GOLDEN RAISIN, APPLE & FENNEL SALAD WITH A CILANTRO CITRUS DRESSING

Ingredients

1 Granny Smith Apple, sliced thin
1 bulb Fennel, Cleaned, cored and sliced into thin pieces
1 tbsp Lemon Juice
1/4 cup Golden Raisins

Citrus Cilantro Dressing
1/2 cup Orange Juice, Fresh Squeezed
1/4 tsp Dijon Mustard
1/4 tsp dry Ginger
1/8 tsp Kosher Salt
1/8 tsp Garlic Powder
1/2 tsp Apple Cider Vinegar
1 tsp Fresh Cilantro, finely chopped
1 tsp Honey
1/4 cup Olive Oil

OPTIONAL: Retain the leaves of the Fennel stalk for garnish.

Directions

• In bowl, coat Apple and Fennel slices with lemon juice to prevent browning. Cover and set aside or refrigerate until you are ready to serve.

• Prepare the Citrus Cilantro Dressing.

• Combine Orange Juice, Mustard, Ginger, Salt, Garlic, Vinegar and Cilantro.

• Slowly whisk in Honey.

• Adding a little at a time, whisk in Olive Oil until the dressing has emulsified (combined well).

• Refrigerate for at least 1 hour before serving.

• Whisk again before serving.

• Add Raisins to Apple and Fennel slices. Toss with Dressing.

• Plate each salad and serve.
