2 cups Pineapple Juice
1 cup Dark Brown Sugar, tightly packed
10 lb. Half Ham Shank, fully cooked
Whole Cloves 


• Preheat oven to 325˚F.

• In saucepan, over medium heat, bring Pineapple Juice and Brown Sugar to a boil.

• Uncovered, boil for 20 minutes.

• Meanwhile, remove Ham from package and discard the round, plastic bone guard.

• Place the largest surface of the Ham face down in a large baking or roasting pan.

• With a large knife, score the Ham. Start at the top right, slicing downward to the left (in a diagonal). Leave 1 ½" width between each slice, scoring the entire surface of the Ham.

• Change direction. Start at the top left, slicing downward to the right (in a diagonal).  Leave 1 ½" width between each slice, scoring the entire surface of the Ham.

• Place one Whole Clove in the center of each scored diamond.

• Brush the entire surface of the Ham with Pineapple glaze. Cover roasting pan with lid and heat in oven for 2 hours.

• Baste Ham with Pineapple glaze every 20 minutes.

• After 2 hours, remove lid. Using the remainder of the glaze, baste one final time.

• Continue heating, uncovered, for a 1/2 hour or until the internal temperature of the Shank reaches 140˚F.

• Let stand for 10 minutes before carving.

• Remove Cloves before serving.

• Serve with Chunky Pineapple Sauce.

If you purchase a difference sized Ham, heat for 15 minutes per pound or until the internal temperature reaches 140˚F. If you have any questions, the heating directions should be on the package.
