3 cups All Purpose Flour
3 tsp Baking Soda
2 1/2 tsp Baking Powder
1 tsp Kosher Salt
1/4 cup Buttermilk Powder drained
1 cup Butter, unsalted
1 tbsp Vanilla Extract or Pure Vanilla
1/3 cup Vegetable Oil
3 Whole Eggs
2 Egg Whites
1 1/2 cup Granulated Sugar
1 - 2 Vanilla Beans, seeded from pod

2 cups Powdered Sugar
4 tbsp Milk
2 tsp Maple Syrup
1 tsp ground Clove
1/2 tsp ground Cinnamon


• Preheat oven to 350˚F.

• In a large bowl, combine Flour, Baking Soda, Baking Powder, Salt and Buttermilk Powder. Sift ingredients twice. Set aside.

• In a small sauce pan or microwave safe bowl, melt Butter. Once melted, set aside.

• In a large mixing bowl, combine Vanilla Extract, Vegetable Oil, Eggs and Egg Whites. On medium speed (speed 4 on Kitchen Aid Mixer), whisk together ingredients until well combined.

• Slowly add Sugar then melted Butter, a little at a time until all has been added. Still whisking, add Flour mixture. Mix until incorporated. Total whisking time should be approximately 5 minutes. Batter will be thick.

• With spatula, fold in Vanilla Bean seeds.

• Line the bottom of two 9" cake pans with wax paper. Grease each pan well. (OPTIONAL: Line the bottom of cupcake pan with wax paper. Grease each opening well.)

• Transfer batter, equally separating it into both cake pans. Smooth out batter. (OPTIONAL: Transfer batter into a cupcake pan, filling each no more than half way full.)

• Bake for 30-35 minutes or until cakes are golden brown and a toothpick, when poked in the center, comes out clean.
(OPTIONAL: Bake cupcakes for 20-25 minutes or until golden brown and a toothpick, when poked in the center, comes out clean.)

• Remove from oven and let cool completely.

• With a 2-1/2" to 2-5/8" diameter circular biscuit cutter, punch out teacakes. You will get seven Teacakes per 9" cake pan. (OPTIONAL: For cupcakes, just turn the widest side of the cupcake face down.)


• Whisk together all ingredients until well combined. Let sit for 5 minutes.

• Using a piping bag, glaze each Teacake.

• Let cakes sit until glaze hardens, approximately 15 minutes.  Garnish each teacake with a small cinnamon stick and orange zest for color.
