2 cans (20 oz) Pineapple, Chunks, drained of juice
1 can (20 oz) Pineapple, Crushed
1/2 cup Dark Brown Sugar, tightly packed
1/2 tsp Vanilla Extract or Pure Vanilla
1 tsp Lemon Juice
1/4 cup White Wine (Sweet)
1/4 tsp Cinnamon
1/4 tsp Allspice
1/4 tsp Kosher Salt
1 1/2 tsp Corn Starch


• Combine Pineapple, Brown Sugar, Vanilla, Lemon Juice, White Wine, Cinnamon, Allspice and Salt in a medium-sized sauce pan. Cover with Lid.

• Over medium heat, bring to a boil and cook for 40 minutes.

• Temporarily remove Pineapple Sauce from heat. With a potato masher, gently press down breaking the chunks into smaller pieces.

• Add Corn Starch, mix well. Return to heat.

• Reduce heat to medium-low. Cover with lid and simmer for 20 more minutes. Remove from heat, transfer to bowl and let cool completely before serving.
