CHOCOLATE COVERED KRISPY PUMPKINS

Ingredients

3 tbsp Butter, diced
10 oz Marshmallows
1 tbsp Vanilla Extract or Pure Vanilla
6 cups Rice Krispies

1 cup Bittersweet Chocolate Chips
1 1/2 cup Semi-Sweet Chocolate Chips
Orange & Black Colored Sprinkles

1/4 cup canned White Icing
1/4 tsp Peppermint Extract
Orange Food Coloring
Green Food Coloring

Pumpkin Shaped Cookie Cutter

Directions

• Grease a 13 x 9 inch pan with cooking spray.

• In a large saucepan, over low heat, melt butter.

• Add Marshmallows and Vanilla. Stir until completely melted.

• Remove from heat and add Rice Krispies. Stir until well coated.

• Using a buttered or greased spatula, pour mixture into pan and press down to make it even. Let Cool.

• Once cooled, use the Pumpkin Shaped Cookie Cutter to cut out 12 pumpkins. Set the remaining unused pieces aside.

• In a double boiler, melt the chocolate together until smooth.

• Dip the top of each pumpkin into chocolate and place onto a waxed paper covered cookie sheet. To speed up cooling, place in refrigerator until set.

• Coat the remaining unshaped krispies in the chocolate, then cover with Sprinkles. Let cool. To speed up cooling, place in refrigerator until set.

• Meanwhile, mix White Icing with Peppermint Extract. Separate evenly into two bowls.

• In first bowl, add Orange Food Coloring to icing until you reach the desired color of orange. Place in small plastic bag. Squeeze icing to one corner and with a pair of scissors, cut or nip the end. Set aside.

 • In second bowl, add Green Food Coloring to icing until you reach the desired color of green. Place in a second small plastic bag. Squeeze icing to one corner and with a pair of scissors, cut or nip the end. Set aside.

• When chocolate is set, ice each pumpkin, drawing the eyes, nose, mouth with orange and the stem with green.

• Place in refrigerator until set. Take out of refrigerator 10 minutes before serving.
