3/4 cup Unsalted Butter
5 oz Unsweetened Chocolate, chopped
3/4 cup Bittersweet Chocolate
3/4 cup Semisweet Chocolate
1/2 tsp Instant Coffee crystals
1 1/2 cup Granulated Sugar
1/2 cup Light Brown Sugar, tightly packed
2 tbsp Unsweetened Cocoa
1/2 tsp Kosher Salt
1/2 tsp Baking Soda
3 Whole Eggs
1 tbsp Vanilla Extract or Pure Vanilla
2 cups All Purpose Flour
1/2 cup Crushed Walnuts


• Preheat oven to 375˚F.

• In saucepan over medium-low heat, combine Butter, Unsweetenend Chocolate, 1/2 cup Bittersweet Chocolate, 1/2 cup Semisweet Chocolate and Instant coffee. Melt until smooth. Set aside.

• Using electric mixer on medium speed, beat together Sugar, Cocoa, Salt, Baking Soda, Eggs and Vanilla for 2 minutes.

• Add Flour. Beat until mixture thickens.

• Reduce to low speed, slowly pour in melted chocolate until well combined.

• Fold in remaining 1/4 cup of Bittersweet Chocolate, 1/4 cup Semisweet Chocolate and crushed Walnuts.

• Drop dough in rounded tablespoons onto greased cookie sheet.

• Bake for 10 - 11 minutes. Remove from oven.

• Let sit for 10 minutes before transferring to a cooling rack.
