BETTY'S BUTTERY BUTTERMILK BISCUITS

Ingredients

2 cups All Purpose Flour
1 tbsp plus 1 tsp Baking Powder
1/4 tsp Baking Soda
1 tsp Kosher Salt
4 tbsp cold Unsalted Butter, cut and cubed (Reserve 2 tbsp for basting)
2 tbsp Vegetable Shortening
1 tbsp Honey
2 Egg Whites
1/2 cup Buttermilk
1/4 cup Reduced Fat Milk (1% or Skim)

Directions

Directions for 11-Cup Food Processor

• Preheat oven to 450º F for at least 20 minutes. Make sure the oven rack is in the center position.

• Insert the dough blade in the processor bowl. Add Flour, Baking Powder, Baking Soda and Salt. Pulse 3 times.

• Add 2 tbsp of Butter and the Vegetable Shortening. Mix until it reaches a coarse sandy consistency, about 1 minute.

• Add Honey and Egg Whites. Turn on processor and slowly add Buttermilk and Milk. Mix about 40 seconds or until mixture is combined and has a fluffy texture.

• Remove lid and drop 2 heaping tablespoons of dough onto an un-greased cookie sheet.

• Meanwhile, melt the remaining 2 tbsp of Butter on stovetop or in Microwave (25 seconds on high). With a basting brush, brush melted butter onto each biscuit.

• Bake for 8 minutes. Open oven door. Brush the remaining melted butter onto each biscuit.

• Close oven door and continue baking for 4 to 7 minutes or until golden.

Total baking time: 12 to 15 minutes or until golden


Directions for Hand Mixing

• Preheat oven to 450º F for at least 20 minutes. Make sure the oven rack is in the center position.

• In medium sized bowl, add Flour, Baking Powder, Baking Soda, Salt, 2 tbsp of Butter and the Vegetable Shortening. Using a pastry cutter or pastry blender, cut the mixture (using a chopping motion) until it reaches a coarse sandy consistency, about 4 to 5 minutes.

• Add Honey, Egg Whites, Buttermilk and Milk. Using a fork or whisk and stirring in a circular motion quickly and vigorously, whisk all of the ingredients together until it is combined and fluffy. This is a great arm workout, because it may take a few minutes to reach this point.

• Drop 2 heaping tablespoons of dough onto an un-greased cookie sheet.

• Meanwhile, melt the remaining 2 tbsp of Butter on stovetop or in Microwave (25 seconds on high). With a basting brush, brush melted butter onto each biscuit.

• Bake for 8 minutes. Open oven door. Brush the remaining melted butter onto each biscuit.

• Close oven door and continue baking for 4 to 7 minutes or until golden.

Total baking time: 12 to 15 minutes or until golden
